Hipsters used to mean try hards for attention that spend all their energy of staying ahead of what is popular.
Now it means any man that dress casually but have spent a single thought on what they wear.
It seems these people calling out "hipsters" think everybody must conform to worn out monochrome t-shirts and blue jeans. Until somebody does it with a nice haircut slightly out of the ordinary, then they too are a hipster. These people would have been mad at The Beatles for their long hair back some ten years after their breakthrough.
I thought hipsters had to wear non-prescription thick rimmed glasses and carry a satchel / record bag. I guess standards have slipped

That's absolutely not what either of those words mean. Hippies were participants in a mid 20th century counterculture with elements such as use of psychedelic drugs, cannabis use, opposition to war, communal living, free love, returning to harmony with nature, and rejection of traditional societal norms.
Yes they had many descendant movements, such as the techno hippies (who ultimately descended into the open source movement), the new age, the Jesus freaks, etc and their influence can even be found in those who rejected them. But there were hippies who were posers and who were only in it for drugs or sex.
Hipster is a derogatory term for young primarily urban people focusing on aesthetics and individualism thats infamously hard to pin down and is largely associated with early 10s indie and social media scenes. In fact it is largely associated with outright rejection of any mass produced culture
Funny thing: There is actually scientific evidence that people who feel they are represented by warning, safety and order signs do follow them more and do encourage people to engage with safety pamphlets more or follow the orders a sign is given - but also subconsciously remember the information/order later much better.
It therefore makes sense to do this.

It just feels better. It's muscle memory because I do the same when driving. Sit down; belt on.
Forget a crash, it saves you from hitting your head on the ceiling when the plane encounters turbulence and suddenly drops 10 meters and everything not held down goes flying inside.
