Probably a lot of collagen too from cartilege. I like fat and bone and a little scrap meat in stocks, but try to trim some cartilege off for this very reason.
Carrot, then cooked in fat. Classic Mirepoix. Its only meant as a base stock for soups and a limited number of sauces. Its not only good, its great! I don't think people are putting it everywhere.

Just to add something missing from the other posts, there are many grades of "leather" that are technically, but not really leather. Could be cheap bonded leather, that is bits of scrap leather glued together and processed to look and feel like leather.
I'm grateful for the reminder that the system still works. I'm saddened to know these things exist in the first place.
